CHICKEN WITH BALSAMIC RASPBERRY SAUCE
Bob Evans Recipe
1 tablespoon olive oil
1/2 cup thinly sliced red onion
1 1/2 teaspoons minced fresh or 1/2 teaspoon dried thyme
1 teaspoon salt
4 boneless, skinless chicken breast halves
1/3 cup Bob Evans Taste of the Farm Red Raspberry Preserves
2 tablespoons balsamic vinegar
1/4 teaspoon pepper
Heat oil in a large nonstick skillet coated with cooking spray over medium heat until hot. Add onion; saute 5-7 minutes or until softened. Remove the onions from pan. Combine thyme and 1/2 teaspoon salt; sprinkle over chicken. To the same pan, add chicken and saute 6 minutes on each side or until done. Remove chicken from skillet; keep warm.
Reduce heat to medium-low. Add 1/2 teaspoon salt, cooked onions, Bob Evans Taste of the Farm Red Raspberry Preserves, vinegar, and pepper, stirring constantly until the preserves are melted. Spoon sauce over the chicken and serve.
Notes: Taste of the Farm products can be purchased at Bob Evans Restaurants only. You may substitute and brand of raspberry preserves for this recipe.
