CHEESY SAUSAGE MUFFINS
Bob Evans Recipe
1 pound Bob Evans Original Roll Sausage
1/4 cup thinly sliced green onion
3 cups pancake and baking mix
1 cup buttermilk
1 cup shredded cheddar cheese
Preheat oven to 400 degrees. In medium skillet over medium heat crumble and cook sausage until brown. Stir in green onion. Remove from heat. In large bowl, combine baking mix, buttermilk, cheese and sausage mixture. Stir gently until combined. Place cupcake liners into cupcake pan. Divide batter evenly between cups. Bake 15 to 20 minutes or until browned and toothpick inserted into center comes out clean. Cool in pan 5 minutes then remove.
