Sausage Cheese Soup

Bob Evans Restaurant Recipe

1 pound Bob Evans Original Roll Sausage
1 (20 oz.) package Bob Evans Diced Home Fries
1 medium carrot, chopped
1 small onion, chopped
1/4 cup flour
1 (14 oz.) can reduced sodium chicken broth
1 1/2 cups whole milk
2 cups shredded sharp Cheddar cheese
1 cup shredded Swiss cheese

In a large saucepan over medium heat, crumble and cook sausage, potatoes, carrot, and onion until sausage is brown and vegetables are softened. Sprinkle flour into pan. Cook, stirring frequently, 1 to 2 minutes. Gradually stir in the broth and milk. Cook, stirring occasionally, until the soup comes to a boil. Reduce heat to low and simmer for 10 minutes or until the potatoes are tender. Remove from heat and gradually stir in cheese. Stir until the cheese is melted and smooth. Serves 6.
